If only the coffee vending machine could offer this..

Just imagine your office coffee vending machine could serve up the following delights with your daily cup of coffee....sadly not, but if you go home and make either of them, send me a piece (please?)

1. COFFEE LIQUEUR PUDDING

Preparation Time: 10 minutes Cooking Time: 5 minutes Serves: 4

Ingredients
1/4 cup cornflour
2 tablespoons and 2 teaspoons sugar
2-2/3 cups milk
1/4 cup coffee flavored liqueur
Plastic wrap
1/3 cup plus 3 tablespoons whipped cream
1/3 cup grated fine dark chocolate

Instructions
Blend cornflour and sugar in a medium saucepan. Add milk slowly, stirring continuously until well mixed. Stir over high heat until mixture boils and thickens. Stir in liqueur and pour into glasses. Cover surface of pudding with plastic wrap to prevent skin from forming. Refrigerate until set. Serve topped with whipped cream and grated chocolate.


2. COFFEE FUDGE SELF-SAUCING PUDDING

Preparation Time: 15 minutes Cooking Time: 1 hour Serves: 8

Ingredients

Pudding:
1/3 cup plus 3 tablespoons milk
2 tablespoons plus 2 teaspoons instant coffee
1 cup self-raising flour
1/3 cup plus 3 tablespoons sugar
1/3 cup plus 3 tablespoons brown sugar
1 egg, lightly beaten
25g unsalted butter, melted

Sauce:
2 cups water
2 tablespoons plus 2 teaspoons dry instant coffee
2/3 cup plus 2 tablespoons brown sugar, lightly packed
1 tablespoon golden syrup
50g unsalted butter, melted

Instructions

Preheat oven to temperature 350°F. Heat milk and coffee in a small saucepan over medium heat, stirring, until coffee is dissolved. Cool. Sift flour and sugars into a large bowl and make a well in centre. Stir egg and butter into milk mixture. Transfer into flour mixture and mix well. Pour pudding into a greased ovenproof dish (8 cups capacity). Combine remaining ingredients in a large jug and mix well. Carefully pour sauce over pudding mixture. Bake 1 hour or until pudding is firm. Cool slightly before serving. Dust with sifted icing sugar, if desired
